  1. 2 tablespoons butter (divided)
  2. 1 tablespoon vegetable oil
  3. 1 cup of diced onions
  4. 1 crushed garlic cube
  5. 2 10 oz bags trader joes English Peas
  6. 2 1/2 cup water
  7. 1 6 oz container organic paste ( use the whole can)
  8. 1 1/2-2 teaspoons salt
  9. 1 teaspoon pepper



  • Add 1 tablepsoon butter and oil to a deep pan.  Once the butter has melted add the onions and garlic.
  • Mix the onions and garlic together in the pan for 4-6 mins on medium hear till the onions start turning brown.
  • Once onions are brown add the 2 packs of peas and mix in well. Let the onions and peas mix together for 3 or 4 mins to coat the peas.
  • Add 2 1/2 cups of water and the container of tomatoes paste and mix well.
  • Add the remaining butter to the pan and the salt and pepper.
  • Cook on medium for 15 mins till sauce has thickened a little.

Serve with Jasmine rice.

Vegetable Meatloaf

This meatloaf recipe is as easy as it gets. It takes 10  minutes to prepare and mix it all together and the oven does the rest of the work!  Serve with mashed potatoes and a green salad!

Preparation Time: 10 minutes. Cooking Time: 1 hour

  1. 2 lbs organic pasteurized beef
  2. 1 cup panko breadcrumbs
  3. 1/2 cup beef broth
  4. 1/2 cup whole milk
  5. 1 cup diced onions
  6. 4 mini sweet peppers
  7. 1/2 cup diced carrots
  8. 1 zucchini diced
  9. 1 garlic cube crushed
  10. 1/2 cup shredded Parmesan
  11. 2 eggs beaten
  12. 1 1/2 teaspoons Hungarian paprika
  13. 1/8 teaspoon black pepper
  14. 2 tablespoons ketchup
  15. 2 teaspoons Worcestershire sauce
  16. 2 tablespoons of ketchup to spread on top of meatloaf once in the pan




Preheat oven to 350°. Place rack in the middle of  oven.

  • In a large bowl, combine the first 15 ingredients. Gently mix all the ingredients lightly but thoroughly.
  • Gently put the Meatloaf into a lightly greased 5×9 inch loaf pan, OR form into a loaf and place in a lightly greased 9×13 inch baking dish. Either one is fine.
  • Spread the remaining 2 tablespoons of Ketchup on top of the meatloaf and bake.
  • Bake for 1 hour. If the meatloaf is getting too brown at the top while cooking, simply cover with foil till it’s  done.

Serve with mashed potatoes.

I wanted to try doing this cake for a while. I  was not sure how the apples would hold up in the pan. I was rather pleased with the result. I was hoping that it would have looked prettier when unfolded from the pan. I admit I was worried at first. However once we took a bite, all doubt vanished! I was as happy as a kid in a candy store. It tasted and smelled yummy. I could not be more pleased with it. By caramelizing the apples it brings in that extra level of texture to the cake. It just melts in your mouth.

Give it a go. Your taste buds will thank you and do the happy dance !


Preparing Apples:

Peel, dice and chop 3 large apples. Pink ladies or Granny Smith work real well as they hold up well when cooked.
In a small pan place 1 stick of butter (4 oz and 11/2  cups or 12 oz of brown sugar and melt in the pan. Once the butter is all melted stir in the chopped apple and Let in rest in there whole preparing the batter.

  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 8 oz sugar
  • 2 eggs beaten
  • 4 pink lady apples pealed, sliced and finely chopped about 2 cups
  • 1 teaspoon vanilla extract


  1. Heat the oven to 350°F. Grease a 9- x 5‐inch Loaf pan or Bundt cake pan.
  2. Melt butter and let cool.
  3. Mix together the dry ingredients in a separate bowl ( flour, salt, baking powder, and sugar)
  4. Add melted butter, beaten eggs and vanilla extract into the the dry ingredients . Stir  enough to just  combine (it’s okay if there are lumps).
  5. Gently stir apples.
  6. Pour the batter into the loaf pan and sprinkle With a teaspoon of brown sugar ( gives it a tasty crunch)
    bake for 50 to 60 minutes, until nicely browned. A toothpick inserted should come out clean.
  7. Let the cake cool for 15-20  mins before you unfold it. It might fall apart if it is too hot. Enjoy with ice-cream and your favorite cup of tea! I enjoyed it the next day after it had been in the fridge.

Banana Chocolate Cinnamon Quick Bread

  • 8 oz all purpose flour
  • 1 4 oz stick butter melted
  • 8 oz sugar plus one teaspoon of sugar to coat the pan.
  • 1.9 lbs bananas. Around 5 mashed
  • 2 large eggs beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tablespoon buttermilk
  • 1 cup of mini semi sweet chocolate chips
  • Top with 1 teaspoon of cinnamon sugar


  1. Put rack in the middle of the oven and Preheat oven to 350  degrees F (165 degrees)
  2. Grease a 9×5-inch loaf pan, with some baking flour spray and sprinkle a teaspoon of sugar in the pan.
  3. Melt butter in the microwave and let cool. 
  4. In the meantime get the flour mixture ready. Mix flour, baking powder, baking soda,cinnamon, sugar and salt in a bowl till well combined. 
  5. Mash up bananas and add the buttermilk. Stir into flour mixture.
  6. Add beat eggs and melted butter to mixture, one at a time gently till combined
  7. Fold in chocolate chips until just combined.
  8. Pour batter into prepared loaf pan.
  9. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 60 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack before slicing.

  • 8 oz Lilly white self rising flour4 oz butter ( 1 stick butter ) melted
  • 8 oz wallaby whole Greek yogurt
  • 8 oz sugar
  • 4 oz eggs( 2 large eggs) gently beaten
  • 1 teaspoon vanilla extract
  • 6 oz mini chocolate chips(Ghirardelli)melted . The rest melts in the oven


  1. Preheat your oven to 350°F. Butter a 9-inch loaf pan.
  2. Put the butter into a microwave safe bowl and melt
    Add sugar , flour, to a bowl and whisk together
  3. In a separate bowl beat the eggs gently, add the vanilla extract and yogurt and combine. Add the melted butter.
  4. Put the chocolate chips in the microwave for 30 secs. Till they start to melt.
    Add the egg mixture to the flour mixture gently. Do not over mix. Just till combined
  5. Gently pour the mixture into the prepared pan and bake at 350°F for 60 mins. Check the cake after around 45 mins to see how brown the top is getting. If its getting too brown simply cover with foil till the cake is done.

  • 8 oz self rising flour plus 4 additional tablespoons of self rising flour( I used unbleached lilly white)
  • 8 oz sugar
  • 4 tablespoons butter 1/2 stick butter softened.
  • 4 oz mascarpone cheese
  • 11 oz mashed bananas ( I used 4 medium)
  • 3.4 oz to 4 oz diced apple. Peeled, cored and diced up. I used 1 small Fuji apple
  • 2 eggs beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon powder
  • 4 oz buttermilk



Preheat oven to 350 F. Place the rack in the middle of the oven. Apply some baking flour spray to the loaf pan and sprinkle a teaspoon of sugar. Set aside

1. In one bowl weigh the flour and sugar.

2. In a seperate bowl beat the mascarpone cheese alone for 2 mins till smooth. Add butter and buttermilk.

Beat together for 4 mins till it’s a nice creamy mixture.

3. Beat in the eggs and vanilla extract.

4. Add bananas and apples and gently incorporate.

5.Gently mix in the flour mixture. If batter looks lumpy it’s fine. Don’t over mix.

5.Gently pour mixture into the prepared loaf pan.

Bake at 350 F for 60 mins till cake insert comes out clean . If a few crumbs are stuck to it, it’s fine.

  • 2 cups  Farfalle barilla pasta
  • 1 tablespoon butter
  • 3 cups chicken broth
  • 2 tablespoons vegetable oil
  • 1 cup diced onions
  • 1 crushed garlic
  • 1 pound chicken cubed
  • 2 cups peas
  • 2 cups shredded carrots
  • 1 8 oz container of creme fraiche



Heat 2 tablespoons of oil in the pan. Once the oil is hot add the onions and garlic to the pan. Cook the onions and garlic for 4 mins till they are soft and translucent

Add the diced chicken into the pan and brown 4 mins till chicken is brown on both sides. Take the chicken out of the pan and cover to keep warm .

Add the pasta, chicken broth and butter to the pan. Bring the broth and pasta to a gentle boil . Continue to cook for 10-12 mins till the pasta is becoming soft.

At this point add the peas and carrots and continue to cook for 2-3 mins till vegetables are warmed up.

Add the creme fraiche to the pan and mix well. Add the corn starch mixed with water to the pan. Mix it well in. Bring the food to a boil for 2-3 mins to thicken the sauce.
Turn off heat and let rest.

  • 8 oz gluten free flour( cup for cup)
  • 8 oz sugar
  • 4 oz ( 1 stick butter) melted
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons whole milk
  • 4-5 around (1lbs )medium banana mashed up
  • 2 large eggs beaten
  • 3/4 semi sweet chocolate chips ( ghirardelli)
  • 1 teaspoon brown sugar . To sprinkle on batter once in the pan


Heat the oven to 350°F.  Grease a 9- x 5‐inch loaf .

2. Gently beat the wet ingredients together.

3. In a separate bowl combine ( flour, sugar, salt and baking soda) With a whisk gently combine the dry ingredients.

5. Bake for 50 to 60 minutes, until nicely browned. A toothpick inserted should come out clean with a few crumbs attached to it.

  • 1 16.5 oz Duncan Hines yellow cake mix
  • 1 3.4 oz French Vanilla instant pudding mix
  • 1 8 oz package cream cheese , softened and beaten
  • 1 tablespoon of sugar
  • 4 eggs beaten
  • 1 14.5 oz cans of peach slices in juice( cut up into small pieces so that they don’t sink in the cake). Reserve juice
  • 1/ 2 cup of juice reserved from peaches
  • 3/4 cup vegetable oil
  • 2 teaspoons of vanilla extract
  • 1.7 oz or 4 teaspoons of all purpose flour


  1. Place a rack in the center of the oven, and preheat the oven to 350 degrees F. Lightly mist a 10-inch tube pan with a butter spray.
  2. Sprinkle 1 Teaspoon of sugar around th pan to coasted it ( it gives the cake that extra crunch top)
  3. Place the cream cheese  in mixing bowl with  the sugar and whip till its soft and smooth. 2 mins
  4. Add the eggs, peach juice, oil, vanilla extract and flour to the mix.
  5. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat for 2-3 minutes more, scraping the sides down again if needed. The batter should look well blended and smooth.
  6. Add the cut up peaches and gently blend them into the batter till well combined
  7. Pour the batter into the prepared pan, smoothing it out with the rubber spatula. Place the pan in the oven.
  8. Bake the cake until it is golden brown and springs back when lightly pressed with your finger, 45 to 50 minutes. Remove the pan from the oven and place it on a wire rack to cool for 20 minutes. Run a long, sharp knife around the edge of the cake, invert it onto a rack

  1. 2 cups of rice
  2. 1 Tablespoon of butter
  3. 2 1/2 cups of chicken broth or water
  4. 2 14.5 oz of petit diced tomatoes with sauce
  5. 1 crunched garlic
  6. 1 small onions. About 1 cup
  7. 2 teaspoon of tomato paste to add to the color
  8. salt and pepper to taste.

Put all the ingredient in the order listed and give it a good stir. Press the white rice setting on the rice cooker. ( I usually press the soft white rice setting)

Give it a stir after about 15 mins to blend it all well and continue to cook it till the cycle ends. I usually check at around 35 mins to see how its cooking. Once all the liquid has been absorbed I usually turn the machine off. Enjoy
